Coffee Walnut Layer Cake with Caramel Drizzle

Coffee Walnut Layer Cake

  • 3 cups self-raising flour 
  • ¾ ground walnuts 
  • 2 cups soft brown sugar 
  • ¾ cup softened butter 
  • ¾ cup hot espresso coffee 
  • 1 Tablespoons Heilala Pure Vanilla Extract 
  • 1 Tablespoon Coffee Extract
  • 3 large eggs 
  • 1 cup Buttermilk 

Caramel Buttercream Frosting

  • 4 cups Powdered sugar 
  • 2/3 cup butter at room temperature 
  • ¾ cup Caramel Sauce (see recipe below) 

Caramel Sauce

  • ½ cup cream 
  • ¾ cup caster sugar 
  • 2 Tablespoons water 
  • ¾ cup butter at room temperature, diced 
  • Extra chopped Walnuts for decoration
